Ajoblanco - White gazpacho

4-6 dry French or Italian style bread
enough water to cover and soak bread
4-6 garlic cloves
250g. ground almonds
one teaspoon salt
1/2 teaspoon sugar
one glass (aprox. 150-200ml) olive oil
6-8 tablespoons vinegar
additional water

In blender or food processor make a smooth puree with all the
ingredients. Add water little by little until the desired consistency
is reached. Taste for salt, sugar and vinegar. Chill thoroughly
and serve with halved grapes or whole raisins floating on top.
(Note: It may be necessary to add more cold water after chilling.)
