Finnish Wine Soup
1/2 litre water crated peel of 1/2 a lemon 2 dl sweet fruit wine 2 dl sweet sherry 2 egg yolks 1 dl granulated sugar For thickening: 2 TBS potato flour (starch) 1 dl water or fruit juice
Boil the crated lemon peel in water for a couple of minutes. Pour the water through a sieve into another kettle and thicken it with starch that's been dissolved into water or fruit juice. Bring to a boil. Add wine and sherry. Heat up but don't boil. Lift the kettle from heat. Whisk together egg yolks and sugar, they should form a fluffy foam. Pour this "egg foam" into a serving bowl and puor the hot soup over the foam, whisking vigoriously. Serve.
