Zucchini 05

Zucchini Soup
3 cups water
1/2 cup red wine
3 mild italian sausage
3 hot italian sausage
2 green peppers cut in 1" pieces
2 onions chopped
3 stalks celery chopped
10 to 12 small fresh mushrooms
1 lg can whole tomatoes with juice
1 to 2 small zucchini cut into 1" pieces
1/4 tsp pepper
1/2 tsp salt
1 tsp thyme
1 tsp oregano
Remove sausage from casing and brown...drain. In large saucepan,
put water and wine, add drained sausage. simmer on low for 15-20
minutes...add all other ingredients except zucchini and simmer for
2-3 hours. Then add zucchini and cook for another 15-20 minutes.
