PAELLA DEL HOGAR (Family-style Paella) for 4 people: 3 Tbsp. good olive oil 4 tsp. grated onion 5 Tbsp. peeled, minced tomato or prepared tomato sauce 2 oz. chorizo or Italian sausage, sliced thinly 2 cloves garlic, peeled and minced very finely 1/2 lb. left over fried or roasted meat and/or fish 2 cups rice Saffron 1 Tbsp. sweet (Spanish) paprika 3 1/2 cups boiling water Salt Heat the oil, then saute the onion, tomatoes or sauce, chorizo, garlic, meat and or fish, and the rice. Mix well, then stir in the saffron and paprika. Add the boiling water and salt. Cook at a strong boil for 5 minutes, then reduce the heat and cook simmer for another 15 minutes. Remove from the heat and let stand for 5 minutes before serving. When they are in season, you can add chopped red or green bell peppers. Fresh horse beans (favas or habas), lima beans or string beans will also add a nice flavor to the paella.
