Apple Jelly

Apple Jelly 1 1/2 cups unsweetened apple juice 1 1/2 teaspoons unflavored gelatin 3/4 teaspoon lemon juice 1/3 cup cold water 6 whole cloves Sugar substitute to equal 1/2 cup sugar 1 stick cinnamon Combine first 4 ingredients in a heavy saucepan. Bring to a boil; reduce heat, and simmer 10 mintues.
Sprinkle gelatin over cold water; let stand 1 minute.
Remove juice mixture from heat; remove and discard cloves and cinnamon. Add gelatin mixture and sugar substitute, stirring until gelatin dissolves.
Pour carefully into 2 hot (8 ounce) jars. Cover lightly until cooled. Cover tightly, and store in refrigerator.
Serve with bread, toast, or crackers.
Yield: 1 1/3 cups
