Belgian Waffles

Gluten Free Dairy Free Belgian Waffles 1 cup rice flour 1/2 cup soy flour 1/2 cup potato starch 1/2 tsp salt 5 tsp baking powder 1 tbsp sugar 3 eggs 1/4 cup vegetable oil 1 1/2 cups milk or soymilk
Measure dry ingredients, mix together, set aside.
In mixing bowl, beat eggs, oil and liquid. Add dry ingredients and fold in gently with spoon. Don't overbeat.
Bake on a heated waffle iron and serve. They freeze if there are any left over. After being frozen, they are slightly heavier and a little less crisp but still good. Makes 6 to 8 waffles.
