FAT FREE BLUEBERRY MUFFINS
1/2 cup apple juice 2 cups flour 1 1/4 cups sugar (white or brown) 2 egg whites 1/2 cup skim milk 2 tsp. baking powder 1/2 tsp. salt 1 to 1 1/2 cups blueberries. Set aside 1/4 cup flour.
Sift together remaining flour and b.powder and salt together. Coat blueberries in the 1/4 cup flour that was set aside (to prevent color from running and turning the muffins green).
Mix apple juice, sugar and egg whites together in a separate bowl. Add milk to the apple juice mixture. mix well. Add flour mixture. mix until just blended. Add blueberries. Fill muffin tins with mixture. use liners if pans are not nonstick. Bake at 350F for 25-30 mins or until toothpick comes out clean.
