Brownies
1 cup flour, unbleached 2/3 cup cocoa powder 1 teaspoon baking powder 1 teaspoon baking soda 1/4 teaspoon salt 1 cup prune puree 1 cup sugar 1 teaspoon vanilla 2 tablespoons Egg Replacer 1/2 cup water
Preheat the oven to 350 degrees.
Combine flour, cocoa, baking powder, baking soda, and salt in a bowl. Set aside.
Mix Prune Puree and sugar together in a separate bowl. Stir in the vanilla. Mix the Egg Replacer and water together and whisk until very frothy. Add to the sugar mixture and stir to combine. Add the wet ingredients to the dry ingredients and stir until mixed. Do not overmix.
Spoon into a nonstick 8-inch-square baking dish and flatten. Bake for 30 minutes.
Prune Puree
12 ounces prunes 1/4 cup light corn syrup 3/4 cup water
Combine the prunes and corn syrup in a food processor and process briefly. Slowly add the water while processing and process until very smooth. Store in a covered jar in the refrigerator.
