Low Sugar Carrot Cake

6 egg whites
1 cup apple juice concentrate
2/3 cup oil
1/4 cup water
3 cups flour
1 Tbs. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon powder
1/4 tsp. nutmeg powder
2 cups raisins
2 cups carrots 4-6 grated medium carrots)

Pre-heat oven to 350F (175 C).

Stir together egg whites, apple juice concentrate, oil and water.
Mix them well.

Sift together flour, baking soda, baking powder, salt, cinnamon
and nutmeg.

Put raisins in warm water to plump. Meanwhile, grease 2 round 9"
(23 cm) cake pans.

Gently stir wet ingredients into dry ingredients just until moist.
Drains raisins. Fold in carrots and raisins.

Pour into cake pans and bake at 350 F (175 C) for 25 - 30 min. Then
reduce heat to 325 F (160 C) for 8-12 more min.
