Chocolate Cheesecake
Yield: 8 Servings

16 oz nonfat cream cheese
1 pk Jell-O instant chocolate fudge pudding mix, sugar free
2/3 c nonfat dry milk
1 c water
1 1/2 ts almond extract
1 c Cool Whip Lite,
1 chocolate-flavored crust, (6 oz)
2 ts chocolate drink mix, sugar free
1 tb chopped almonds
1 tb miniature chocolate chips

In a large bowl, stir cream cheese with a spoon until soft. Add
dry pudding mix, milk powder and water. Mix well, using a wire
whisk. Stir in 1 tea almond extract and 1/4 cup Cool Whip Lite.
Pour mixture into the pie crust. Refrigerate for about 15 minutes.
In a small bowl, combine remaining Cool Whip Light, remaining almond
extract and chocolate drink mix. Spread mixture evenly over cheesecake
filling. Sprinkle almonds and mini chocolate chips evenly over
the top. Refrigerate until ready to serve.
