Diabetic, Low-Fat Cherry Jelly
1 cup sour cherries 1 cup water 3 tsp. granulated sugar replacement 1 Tbsp. lo-cal pectin
Rinse cherries and remove the stems. Combine cherries and water in saucepan. Bring to boil, reduce heat, and simmer 5 minutes. Strain; reserve juice. Add sugar replacement and pectin to 1 cup (250 ml) of juice, adding extra water, if necessary, to make up the juice. Stir to completely blend and return to heat. Bring back to boil, boil for 1 minute and then remove from heat. Boil slightly. Pour into serving dish or jelly jar: chill. Makes 3/4 cup.
