Chocolate Chip Macadamia Nut Cookies Serves: 36 2 cups (4 sticks) unsalted butter, softened 4 large whole eggs plus 2 egg yolks 2 cups Splenda 1 cup honey 2 tsp. Baking soda 5 cups instant oatmeal (ground) 2 tsp. vanilla extract 3 cups all-purpose flour 2 tsp. baking powder 1 tsp. salt 2 cups chopped macadamia nuts 3 cups sugar-free chocolate chips
Preheat oven to 375F. Grease 2 baking sheets and set aside. Grind 5 cups of instant oatmeal in a food processor on hoigh setting until oats are finally ground. Combine Splenda, honey, and butter with a hand mixer and mix until fluffy. Beat in eggs and vanilla. Mix in flour, salt, baking powder, and baking soda. Stir in ground oatmeal, chocolate chips and nuts. Place heaping tablespoonfuls on baking sheet 2 inches apart and flatten with back of the spoon.
Bake for 10 minutes, until cookies begin to become golden. Cool on rack.

A little hard to stir in chips/nuts, but very tasty recipe. Did some substitutions - sugar for splenda, old fashioned oats for instant oatmeal, no salt bc i had salted macadamia nuts, dark choc chips instead of sugar free choc chips. couldn't bake entire batch @ 1 time, so refrigerated 1/2 the dough & baked the rest a few days later - STILL great! I also baked the 2nd batch @ 350 instead of 375 bc i was baking something else @ the same time. no problem!
