1 1/2 cup amaranth flour
1/2 cup potato starch (potato water)
1/2 cup sunflower or sesame seed
1 1/2 tsp. cinnamon
1/3 cup oil or walnut oil
1 Tbsp. lemon juice
2/3 cup raisins
1 cup walnuts or other nuts, chopped
1/2 cup peanuts
1/2 cup grated coconut, unsweetened
3/4 cup mashed banana or pureed fruit
1/4 cup maple syrup or honey
1 1/2 tsp. pure vanilla extract
Mix the flour, walnuts, potato starch, peanuts, sunflower seeds,
coconut and cinnamon in a large bowl. Mix bananas, oil, syrup,
lemon juice and vanilla in small bowl. Pour liquid over dry mixture.
Stir well to coat mixture. If mixture seems too dry, add a few
tablespoons of water. Spread mixture in a lightly oiled pan. Bake
at 300 degrees for 45 to 60 minutes, stirring every 15 minutes.
Remove from oven. Cool; then stir in raisins.
