Gluten-Free Lemon Cake

4 eggs
3/4 cup sugar
1 teaspoon vanilla
1/4 cup vegetable oil
1 tablespoon lemon peel
2 tablespoons lemon juice
1/2 cup rice flour
1/4 cup potato starch

Beat eggs and sugar together. Add vanilla, oil, lemon peel, lemon
juice, and flours. Beat until smooth. Pour into greased 9"x9"
baking pan. Bake in preheated 350 degree oven for 30 minutes.
May frost or serve with hot lemon sauce.
