LOWFAT BREAKFAST PANCAKES
[2 servings]

1/2 cup flour
heaping 1/4 tsp baking powder
1/2 cup skim milk
1/2 cup egg substitute
1 tsp canola oil
No-stick cooking spray
maple syrup
Low fat or fat-free margarine

Mix together the flour and baking powder. Add egg substitute, skim
milk, and teaspoon of canola oil, beating with wire whisk. Spray
teflon pan with no-stick and heat over medium high. Add batter by
1/4 cupfuls (3 at a time) to pan. Lower heat to medium, cook and
turn. Repeat with remaining batter. Serve with maple syrup and
fatfree margarine.

Makes 10 small pancakes.


Baked Fruit Clafouti

This recipe can be modified to use as a base for a fruit "clafouti"
dessert. Add 3 teaspoons sugar to 3-4 cups cut up peaches, plums,
or other fruit. Stir to coat. Add 3 teaspoons of sugar to the basic
pancake batter recipe. Spray a baking dish with no-stick. Pour in
the batter. Top with fruit, dash of cinnamon. Bake at 400 degrees
for about 30-35 minutes, or until brown and toothpick inserted in
center comes out clean. [4 servings]
