PEANUT FINGER FAVORITES

1 envelope unflavored gelatin
1/4 cup skim milk
1/2 cup chunky peanut butter
3/4 cup unsalted peanuts; chopped
1/2 cup no-sugar wheat flakes

Soak gelatin in cold milk in saucepan, allow to soften 5 minutes.
Add peanut butter. Cook and stir over medium heat until peanut
butter is melted and mixture is very hot. Remove from heat and
allow to cool slightly. Stir in peanuts and wheat flakes. Form
into 28 finger-like shapes. Refrigerate until cool and set.

Coating (optional): Melt 2 oz. dietetic chocolate coating with 1/4
oz. paraffin wax in small pan or bowl over simmering water. Dip
peanut fingers one at a time. Place on waxed paper to cool.

Yield: 28 fingers
