Low Fat Pesto

1 Tbs olive oil
3/4 Tbs umeboshi plum vinegar
1 Tbs Parmesan cheese, grated
2 cups fresh basil leaves
3/4 cups stock, vegetable
1/2 cup crackers, cheddar, crushed
2 Tbs brown rice vinegar
1 can water chestnuts, 5-oz
3 garlic cloves

In a blender, combine all ingredients except water chestnuts. Add
more water as needed to make smooth, creamy mixture. Add water
chestnuts, pulse to mince. Adjust seasonings. Refrigerate at
least one hour for flavors to blend.
