Yeast-Free Pizza Dough

6 ozs self-raising flour (or plain flour with 2 tsp baking powder mixed in)
1 1/2 ozs butter
3 tablespoons milk
3 tablespoons water
1 teaspoon salt

Stir salt into flour. Rub butter into flour thoroughly. Make well
in centre of flour and pour warmed milk and water. Mix thoroughly
with spoon. Turn out and knead until smooth. Turn out and roll out
to 9 inch round. use your favourite topping. May I suggest the

4 tbs olive oil
1 tin (14oz) chopped Italian tomatoes
1 large onion
2 garlic cloves
handful of chopped basil or oregano leaves (or 1tsp dried)
salt and black pepper

Heat oil in saucepan. fry onion and garlic till soft. Add herbs,
tomato, salt and pepper. Add a cup or so of hot water to give a
fairly loose mixture. Cook uncovered. stirring frequently till
sauce thickens. Check seasoning and leave to cool. If you want a
smooth sauce, liquidise until desired consistency is achieved.

Spread sauce over pizza dough and top with sliced mushroom and a
strong grated cheese. Finish off with grated parmesan.

Bake in hot oven for about 20 minutes till crisp.

NOTE: Use fresh herbs if at all possible. They are completely
different to the dried variety. If you use dried, try and get the
freeze-dried variety.
