Potato Pancakes
1.5 C boiled, sliced potatoes 1/4 C skim milk Butter Buds, Molly McButter, etc. to-taste Salt to-taste 1 egg 1/4 C flour Water
Mash potatoes with milk in mixing bowl. Add salt and butter flavouring to-taste. Pour egg into 1/2 C measure then fill with cold
water.
Pour egg-water mixture into mashed potatoes and mix well. Add flour and combine thoroughly. Let mixture "set up" for 5-10 minutes. Use heaping teaspoons to measure batter onto heated non-stick griddle. When edges appear to be drying and/or air bubbles appear on top flip the pancakes.
Note: In place of egg you may substitute 2 egg whites or a one-egg portion of Egg Beaters or similar product. The egg yolk contributes the only fat in this recipe.
