Pumpkin Cream Pie

3 cups fresh pumpkin pureee (or use canned)
3/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon grated nutmeg
1/4 teaspoon grouns cinnamon
1 teaspoon freshly grated ginger (or 1/2 teaspoon ground)
3 large eggs, lightly beaten
1 cup coconut cream

Take a can of coconut milk, leave it on the counter for an hour or
so - open it carefully and skim off the thick cream. Add enough of
the thinner milk to make 1 cup.

Preheat oven to 425.

Line a 9" pie pan with pastry crust and build up a fluted edge.

Combine all ingredients in a mixing bowl - blend well. Pour into
the prepared shell and place in the oven

Bake for 15 minutes Reduce heat to 350 and bake for 30-40 more
minutes, or until the filling is set.
