Baked Rice Pudding (Sugarfree)

1/2 cup water
1/4 tsp. salt
1/4 cup rice
1 egg
1 1/4 cups 2% milk
4 tsp. brown sugar
1/2 tsp. vanilla
1/4 tsp. cinnamon
1/4 tsp. nutmeg
2 Tbsp. raisins

Bring water and salt to a boil. Add rice, reduce heat, cover and
cook slowly for 15 minutes; do not lift lid. Beat together egg,
milk, brown sugar, vanilla, cinnamon and nutmeg.When rice is cooked,
stir it into the milk mixture. Add raisins and spoon into a 4 cup
(1L) oven-proof baking dish. Place this in a large pan in oven.
Pour boiling water in pan to half way up baking dish. Bake in a
350F oven 30 minutes. Continue to bake 30 minutes longer until
lightly browned.

Makes 4 servings.

Note: Non-nutritive sweeteners, white or brown can be substituted
for the sugar. Splenda is one brand that is heat stable.
