LOW-FAT SLOPPY JOES
1/2 lb. ground turkey breast meat 1/2 c chopped onion 1 can (15 ozs.) fat-free chili 1/4 c chopped celery 1/4 c chopped green pepper 1/2 c corn kernels, fresh or frozen 1/2 c no salt tomato sauce 1 tsp honey 1/8 tsp cayenne pepper 1/2 tsp paprika 1/2 tsp dry mustard 3/4 tsp chili powder
In a large heavy pan, cook ground turkey for 3 to 5 minutes, until no longer pink. Add onion and saute 2-3 minutes longer, until softened. Add chili, celery, green pepper, corn, tomato sauce, honey and seasonings to turkey. Cover and simmer 30 minutes, stirring occasionally. Serve with French bread, English muffins or hamburger buns. Makes 4 servings.
