Sauteed Alligator
2 tablespoons unsalted butter 3 cloves garlic, diced 1/4 teaspoon hot red pepper flakes 1 1/2 pounds alligator (pork loin may be substituted), cut in 1-inch cubes 1/2 cup dry white wine Salt to taste
Melt butter in a heavy-bottomed skillet or frying pan over medium heat. Add garlic and cook, stirring constantly, until it begins to turn golden. Add pepper flakes and alligator meat, increase heat to medium-high and cook, stirring frequently, until meat turns opaque and is cooked through, 12 to 15 minutes (if using pork, cook 5 minutes longer). Transfer meat to a warm platter or serving dish, and keep warm.
Add the wine to the pan and scrape up any brown bits from the bottom. Reduce the wine by two-thirds, season with salt, and pour over the alligator . Serve immediately with steamed rice.
