Grilled Beef heart
Slice the heart 1/2 inch thick or so. Mix slices with 2 tablespoons
olive oil and some salt and pepper, let stand for at least 1/2
hour. Cook in a hot saute pan for about 8 minutes, turning frequently.
Remove to serving disk, sprinkle with lemon juice, and serve. Do
not let this sit after cooking - it gets tough.
