Beef Heart in Anchovy Sauce

Trim beef heart and cut into pieces 1 1/2 inches long and 1 inch
wide. In a saute pan heat 2 tablespoons olive oil and brown a garlic
clove that has been cut in half. Remove the garlic and add heart,
browning over a high flame for about 8 minutes. Add 3 anchovy
fillets, chopped, and cook, stirring, for another minute. Remove
from heat. Season with salt and pepper and 2 teaspoons lemon juice.
Garnish with chopped parsley and serve with white rice.
