Ugandan Beef Kidneys

5 lbs beef kidneys, separated, cleaned and cut into 1 inch peices
1 large onion, diced
6 carrots cut into large julienne
1 small can tomato sauce
salt
pepper
3 tablespoons curry powder

Saute onion until transulent. Add beef kidneys,saute until browned.
Add tomato sauce. Add enough water to cover. Add seasonings.
Cook over medium heat for 1-1 1/2 hours or until tender, stirring
occasionally. Serve over baked mashed plantains, rice or noodles.
