Chicken Livers Aloha serves 4
1/4 cup butter or margarine 1 cup chopped celery 1/2 cup chopped onion 1 medium green pepper, sliced 1 1/2 pounds chicken livers 15oz can pineapple chunks, drained 2 tablespoons brown sugar 1 tablespoon cornstarch 1 3/4 teaspoons salt pinch ground pepper (optional) 3/4 cup water 2 tablespoons cider vinegar 3 cups hot cooked rice
In 12 inch skillet over medium high heat, in hot butter, cook celery, onion and green pepper until tneder-crisp, about 5 minutes. Add livers, cook 10 minutes, stirring , add pineapple. In small bowl, mix sugar, cornstarch , pepper and salt. Stir in water and vinegar until smooth. Stir into chicken livers, cook, stirring, until thickened. Serve with rice.

Liver is good for you and this is a great way to eat it. I omitted the celery \'cause it\'s not high on my list... Prep. is easy and cooking is quick. Great sweet/sour taste to sauce. Liver stays crumbly, not rubbery.
Certain to be made again!
