Chitterlings

5 pounds chitterlings
2 red pepper pods, cut up
6 whole cloves
1 bay leaf
2 garlic cloves
1 large onion
1 stalk celery
1 teaspoon pepper
1/4 cup vinegar
boiling salted water

Cover chitterlings with cold water and soak for 6 hours. Drain and
combine all the ingredients an a large pot, cover with boiling
water and cook until tender.

Fried Chitterlings

Using the above boiled chitterlings, dip into beaten eggs, roll in
cracker crumbs or any other frying substance you desire, fry in
deep fat or lard until golden brown.
