RABBIT PIE

Cut rabbit into serving pieces. Soak in equal parts vinegar and
water for 12 to 24 hours. Drain and wipe dry.

Sprinkle with salt and pepper and dredge with flour. Sear quickly
in a frying pan.

Add water to cover and simmer slowly in a covered pot for 1&1/2
hours.

Add 2 onions, 2 medium sized carrots and 2 or 3 potatoes, all cut
into pieces. Cook until the vegetables are done. Thicken the stew
with flour.

Put in a greased baking dish and cover top with pie crust or biscuit.
Bake in moderate over (375) until dough is done.
