Sweetbreads in White Wine

4 sweetbreads, sliced
2 shallots, minced
2 tablespoons butter
2 tablespoons flour
1 cup white wine
6 button mushrooms, chopped
1/2 cup chopped parsley
season to taste

Soak sweetbreads in water for l hour and clean thoroughly. Using
large pan, fry shallots in butter and stir in flour. Add wine,
mushrooms and sweetbreads . Season well. Add enough water to cover
and simmer until tender. Top with parsley.
