Breaded Sweetbreads

1 lb. sweetbreads
1 cup browned bread crumbs
10 mushrooms, fresh
1 onion, large, diced
2 tablespoons margarine or oil
salt and pepper, to taste

Parboil sweetbreads, about 15 minutes, and remove membranes. Cut
in bite-sized pieces and roll in crumbs. Saute vegetables in
margarine or oil. Add sweetbreads and seasonings and cook uncovered
for 30 minutes in large frying pan. Turn occasionally for even
browning. Serve on a bed of fluffy white rice.
