Sweetbreads and Cucumber Salad
1 pair sweetbreads
chicken broth
1 onion stuck with 2 cloves
2 cucumbers, peeled, seeded and thinly sliced
vinaigrette
Plunge Sweetbreads in ice water and let them soak 20 minutes Poach
in seasoned chicken broth for 15 or twenty minutes. Remove membranes
and other extraneous matter as well as possible and let cool for
several hours. Cut into dice and combine with cucumbers. Toss well
with vinaigrette.
