Zeytinyagli Enginar (Artichoke in Olive Oil) For 4 Persons
4 peeled artichokes 4 onions 1/2 lb broad beans 1 tablespoon sugar salt pepper 1/2 cup lemon juice 1 cup olive oil
Peel the artichokes in water mixed with lemon juice. Saute the chopped onions in olive oil. Place the artichokes in a shallow pan. Add the broad beans. Place one spoonful of sauted onion on each artichoke. Add salt sugar and pepper. Cook in very little water at medium heat for 35 minutes. Serve cool.
