Beetroot fritters

1 lb self raising flour
salt
10 fl oz lager
oil for deep frying

12 beetroot wedges or 12 small ping-pong size beetroots
salt and pepper
malt vinegar

Mix the flour and salt in the lager until you have a smooth thick
batter with a glue like consistency. Pre-heat a frying pan to
180C/350F. season the beetroot wedges or small beetroots and dust
with flour. coat with batter. Drop into the hot fat and fry for
a few minutes until crisp and golden. Remove and salt slightly.
sprinkle with vinegar before serving if liked.

Note: Parsnips also work well with this recipe.peel and quarter
the parsnips, blanch for 2-3 minutes. Drain cool and pat dry.
Lightly flour and coat with batter. Cook in the same way. Salt
before serving.
