Brussels Sprout Saute

2 cups Brussels Sprouts, quartered and cooked al dente
2 teaspoons oil
1 red onion chopped
1 small can mandarin oranges (drained)
1/2 to 1 cup julienned ham
1 tablespoon apple cider vinegar
salt and pepper to taste

Cook Brussels Sprouts and set aside. In a large fry pan heat oil.
Saute onions until translucent. Add ham and cook for another 2 -
3 minutes. Add Brussels Sprouts, oranges, cider vinegar, salt and
pepper. Heat through and serve.
