Sugar Browned Potatoes
Brunede Kartofler- Denmark

1/4 cup sugar
6 tablespoon butter
2 pounds small potaotes, cooked and peeled

Brown sugar in skillet, stirring until caramelized. Add butter,
stirring. Blend. add potatoes. Heat, turning, until browned on
all sides. Serve with pork. 4-6 servings.

I made a few minor improvisations. I used canned new potatoes (right out ofthe can, drained), and added several tablespoons of chopped parsley during the last minute or two of cooking. This was excellent with frikadellars and red cabbage. Visually appealing, and so delicious.
