Corn Fritters

1 cup all-purpose flour
1 1/2 tsp. baking powder
2 eggs
1/3 cup milk
1 can (15 1/4 oz.) whole kernel corn, drained
1 Tbs. butter or margarine, melted
Oil for deep fat frying
Confectioners' sugar
Maple syrup, warmed

In a bowl, combine flour and baking powder; set aside. In another
bowl, beat the eggs and milk; stir in corn and butter. Stir into
dry ingredients just until blended. In a deep-fat fryer or electric
skillet, heat oil to 375 F. Drop batter by heaping teaspoonfuls
into hot oil; fry for 2-3 minutes or until golden brown. Drain on
paper towels. Dust with confectioners' sugar. Serve with syrup.
Makes about 2 dozen.
