Corn Pudding

2 tsp olive oil
1 sm onion, diced
2 cloves garlic, chopped
4 c fresh corn
3 eggs
1/2 c. flour
1 c half and half (medium-heavy cream)
1 tsp. chopped basil
salt
pepper
1/4 c each Parmesan, Gouda, sharp Cheddar

Saute onion and garlic in olive oil, in sauce pan. Add drained
corn, and heat.

Make the custard: add flour to beaten eggs; add the 1/2 and 1/2,
the chopped basil, and salt and pepper to taste. Put the corn
mixture in a greased shallow casserole dish and pour the custard
over. Mix the 3 cheeses and sprinkle them evenly on top.

Bake at 350 deg. until the custard is set (about 35-45 minutes).
