Creamed Spinach 03

CREAMED SPINACH
10-oz pkg. spinach, thawed, drained, and pressed
2 Tablespoons butter or margarine
1 1/2 Tablespoons all-purpose flour
1/2 cup milk or cream
salt and pepper to taste
Melt butter, blend in flour, cook one minute. Stir in milk and
cook until thickened, stirring constantly (I use a whisk). Add
spinach and heat through.
Possible additions: Small amount pressed garlic. Toasted pignola
nuts. Toasted almonds. Filo cups (as containers). Sliced
hard-cooked eggs.
