6-8 large ears of sweet corn, cleaned, rinsed, and kernels removed from cob
1 green peppers, diced
1/2 cup all-purpose flour
1 tablespoon granulated sugar
salt & pepper to taste
1/2 cup vegetable shortening
Combine corn kernels, green pepper, flour, sugar, salt and pepper.
Toss to evenly coat vegetables. Heat shortening until hot.
Carefully add the corn mixture and fry until the corn is tender
and starts to brown. Stir frequently to prevent sticking.
