Garlic Green Beans
2 cloves garlic boiling water 1/4 c wine vinegar 1 tsp olive oil (or less if you want) salt and pepper to taste 1 lb fresh green beans (preferably Blue Lake variety)
Leaving garlic cloves in their skins, pour at least a cup of hot water over the garlic cloves, cover and let sit for 5 minutes. This will alter the flavor of the garlic substantially and is an important step. Then remove the skin and mince or crush. Combine with balance of ingredients in a large bowl and let sit.
Clean green beans, leave whole and ightly steam for about 10 minutes or less. Beans should still be slightly firm and not mushy. Drain green beans and while still hot combine in large mixing bowl with above dressing. Toss well and serve warm.
Alternative: These are also delicious cold for picnics and will keep in the refrigerator for 4-5 days.
