Roasted Garlic Mashed Potatoes
1 whole garlic head 1 Tbs olive oil 1 lb. peeled Yukon Gold or red potatoes, quartered 3 cups water 1/2 cup 1% milk 1/4 tsp salt 1/4 tsp pepper
Preheat oven to 375.
Remove papery skin from garlic head, but don't peel or separate cloves. Rub the oil over the garlic head and bake it in foil at 375 for one hour. Let it cool, then separate the cloves and squeeze out the softened garlic. Discard skins.
Boil potatoes in a saucepan for 15 minutes or until very tender. Heat milk in a pan over medium heat until hot (don't let it boil), then add potatoes, salt, and pepper and beat with electric mixer at medium until mixture is smooth. Add garlic and stir well. About 105 calories per 1/2 cup.
You can also use 2 Tbs. sage instead of the garlic or 3 Tbsp minced chives and 1/2 cup crumbled goat cheese for a different flavor.
