Roasted Garlic Mashed Potatoes
Serves 6

1 head garlic, cloves separated and peeled
2 lbs red potatoes, peeled and quartered
1/2 cup milk or light cream
2 oz butter or margarine (butter tastes better)
1/2 tsp salt
1/2 tsp freshly ground pepper
1/4 cup Parmesan cheese

Heat oven to 350 F, coat garlic with a tablespoon of olive oil,
place on cookie sheet. Roast for 20 to 30 minutes till well browned
and soft. Boil potatoes until tender, about 15 minutes, drain well
and place in a mixer bowl, add remaining ingredients and mix till
mashed and combined. Adjust seasonings to taste.

Notes: Leave the peels on the potatoes if you like. If you are
garlic fiend (or afraid of vampires), use 2 heads.
