Ginger and Cranberry Glazed Carrots
Serving Size : 6

1 TBS olive oil
1 clove garlic, minced
1 tsp sugar
4 TBS orange juice
1 tsp orange zest
2 tsp fresh grated ginger
1/2 cup fresh chopped cranberries
1 pound baby carrots

In a sauce pan heat the oil; add all ingredients except the carrots.
Saute briefly, then throw in the carrots. Cover and simmer until
al dente. Serve hot and enjoy!
