For any of you looking for a special meal for St. Patrick's day, here is a new take on cabbage.
CABBAGE AU GRATIN
4 cps. coarsely shredded cabbage 1 (16 oz. can) tomatoes, (do not drain) 2 tsp. sugar 1 tsp. salt 1 tsp. oregano salt and pepper to taste 1/2 cp. grated cheddar cheese 1 cp. bread crumbs, finely ground
Cook cabbage in boiling water, til wilted -- about 5-6 minutes. Drain well.
Combine tomatoes, sugar and oregano, gently break up tomatoes.
In a greased (I use non-stick spray) baking dish, place cabbage sprinkled with salt and pepper, covered with tomatoe mixture, then cheese, then crumbs.
Bake uncovered for 30 minutes in a 350 degree oven, or till heated thoroughly.
Serves 4-6.
