Cauliflower with Crispy Crumb Top

1 large cauliflower, separated into even-sized florets

85g / 3oz butter
100g / 4oz fresh breadcrumbs
1 garlic clove, finely chopped
grated zest of 1 small lemon
2 Tbsp chopped fresh parsley

Start the topping: melt 50g / 2oz of the butter in a frying pan.
When foaming, add the crumbs and fry them until crisp and golden,
about 5 minutes. Stir in the garlic, then set the pan aside. Steam
the cauliflower over a large pan of boiling water for 5 minutes.
Heat the rest of the butter in a separate pan, add the cauliflower
and fry until it just starts to brown. Spoon the florets into a
hot serving dish. Mix the lemon zest and parsley with the breadcrumbs,
season with salt and pepper and sprinkle the mixture over the
cauliflower.
