Gratin of Potatoes

1 1/2 Tbsp butter
2 Tbsp flour
1 cup hot milk
salt and pepper
2 cups Gruyere cheese (or jack, cheddar or Swiss)
2-3 cups potatoes, peeled and sliced
1/2 cup Parmesan (optional)

Grind butter and flour into a paste. In sauce pan add butter and
flour paste, heat and slowly whisk in the hot milk whisking non
stop, add salt and pepper and when sauce has thickened add half of
the Gruyere and Parmesan Mix in sliced potatoes Place potatoes in
a casserole dish. Cover with second half of cheese Cover with foil
and bake at 350 for 30-45 minutes or until cheese is bubbly and
