Oriental-style Cold Green Beans or Asparagus
1/2 to 1 pound green beans (or asparagus) 1/4 cup diced pimientos or roasted red bell pepper 1/4 cup soy sauce 1 t to 1 T toasted sesame oil (depending on your preferences)
String the beans and cut into 2"-3" lengths. Blanch until barely tender and bright green. (The way we do it is to place them in a frying pan with enough cold water to cover/float. Place over high heat, and bring to boiling point. Remove from the heat and let sit until the water has cooled.) If you're blanching using the traditional dunk-into-boiling-water method, plunge into cold water to stop the cooking. Combine with the pimientos. Combine soy sauce and sesame oil and drizzle over vegetables. Serve chilled.
