Shanghai Green Beans with Ham
1/4 cup finely chopped York ham (if using Smithfield, omit salt) 3 Tb canola oil 14 oz French cut green beans, rinsed & trimmed - cut into 2 1/4 in lengths. 1 clove garlic, minced 2 thin slices ginger, peeled 1 tsp salt 1 1/2 tsp rice wine (Shaoxing) 1 Tb cornstarch 1/2 cup very light chicken or vegetable broth
Heat 2 Tb oil until very hot & fry the ham until crisp; drain and set aside.
Parboil the beans in unsalted water for 5 mins (just until crisp-tender); drain.
Add the remaining 1 Tb oil to the wok or pan & gently fry the garlic & ginger slices. Add the salt, wine, and the cornstarch mixed with the cold broth and cook until the liquid has reduced and thickened slightly.
Transfer to a serving dish and sprinkle with the fried ham.
