Green Beans with Walnuts
1 lb. whole green beans
3 tablespoons walnut oil
1 tablespoon butter
1 large shallot, minced
herbs of your choice
Toasted chopped walnuts
If using fresh green beans, trim ends and cook in boiling water
3-4 minutes, then, immerse immediately in cold water to stop the
Melt the butter in a large skillet.Over medium-low heat, Add the
shallots and cook until translucent. Add in the herbs, and when
you start to smell them, add the walnut oil.
Put the drained beans into the pan, and toss well with the shallots
and oil mixture, so that the beans are evenly coated. Continue
cooking over low heat until the beans are heated through and cooked
to desired degree. (If you like em soft, keep cooking them, if you
liek them crisp tender, cook them less. I cook em about 5 min. at
this point, and they are cooked but not mush).
Sprinkle with walnuts, and serve immediately.
